Anyone who says they hate Spam have clearly never tried it! I thought these would be fun to try over the 4th holiday while cooking at the camper on my flattop griddle.
Here’s what you’ll need:
- 1 can Spam
- 4 eggs
- 2 Tbsp low sodium soy sauce
- 1 Tbsp mirin
- 2 tsp brown sugar
- 2 Tbsp mayo
- 1 tsp sriracha
- 1 green onion, whites and greens diced
- 4 buns of your choice
- 1 Tbsp butter
These are about as simple as you can get, but very delicious. In a small bowl, combine the soy sauce, brown sugar and mirin and mix well until the sugar is dissolved. Set aside. Combine the mayo and sriracha and mix well, set aside.
Open the spam, take it out of the container and slice into 1/4 inch slices. Butter the buns, and have your eggs handy. This all happens pretty quickly. Start cooking the spam on the flat top over medium high heat. Put your buns butter side down on a cooler part of the griddle – it’s OK if it takes a little bit to toast them. Once the spam is starting to get a nice golden brown, lower the heat and drizzle with the soy marinade. BE CAREFUL! It’ll burn if your griddle is too hot or you cook it too long. In the meantime, crack your eggs and fry up four over easy eggs.
Add the sriracha mayo to the bottom bun once they are toasted, top with the cooked spam, the over easy egg and a sprinkling of the green onions. Serve immediately. Feast like kings!
