Mary's Lemon Bars

INGREDIENTS

1 lemon cake mix. Any brand. I use one with extra pudding added

3 large eggs

1/2 cup applesauce

1 package instant pudding

2 cups milk

 

DIRECTIONS

Preheat oven to 350 degrees.

Mix instant pudding with milk. Add rest of ingredients to cake mix.

Mix together in large mixing bowl.

Spray jelly roll pan and pour batter into pan.

Bake 350 degrees for 30 to 35 minutes.

Cool cake and sprinkle with powdered sugar or frost cake with thin frosting. I use canned frosting - creme cheese or vanilla frosting.

Cut in small squares and enjoy. I take it to potluck suppers a lot because it is such a light dessert.
