Sandy's Stout Caramel Popcorn

I actually don't search for every recipe made with beer. They find me. This is from one of our co-workers who happens to be a great cook. It combines 2 of my favorite things. Popcorn and beer! In this case it's Stout so the next time you're enjoying one, try to save a half cup.

Candy thermometer

10 to 12 cups popped popcorn

1/2 cup Stout beer

1 and 1/4 sticks butter

1 and 1/4 cups packed brown sugar

1/3 cup light corn syrup

1/4 tsp baking soda

1 and 1/2 tsp sea salt

Preheat oven to 250. Mix melted butter, brown sugar, corn syrup, stout and 1/2 tsp sea salt in a saucepan over medium heat until sugar dissolves. Bring to a boil and heat until candy thermometer reaches 248 degrees. Remove from heat and stir in baking soda.

In a large bowl, pour mixture over popcorn and stir until popcorn is evenly coated. Transfer popcorn to a large baking sheet and bake for 35 to 40 minutes, tossing a couple times. Remove from oven and sprinkle on remaining salt and set aside to cool.
