There's no reason to buy marinades at the grocery store when they are so easy to make. Marinades need a couple key ingredients to make them work. Combine a citrus juice and your favorite flavorings. Most marinades contain citrus because it breaks down the tissue and makes meat more tender. You can add practically anything to lemon juice and call it a marinade. Experiment a little with different spices. Here's my favorite made from stuff I always have in the kitchen:
- 3 tablespoons dried basil
- 2 tablespoonsdried parsley flakes
- 1 teaspoon ground pepper
- Couple shakes of hot sauce
- Mix all ingredients and place in a heavy duty zip lock bag. Add meat and seal, getting as much air out as possible. Marinate for a couple hours.
