First Day of Fall with Pumpkin Bars

I've never been crazy about pumpkin pie or pies in general which saves me a few calories during the Holidays. I do, however, lack self control when it comes to these pumpkin bars! They're even better with cream cheese frosting which is really easy to make. You can skip the chainsaw & pumpkin and just buy a can at the store but it's not as much fun.

Here's what you need for the bars:

2 cups sifted flour

2 tsp. baking powder

2 tsp cinnamon

1 tsp. baking soda

1/2  tsp. salt

2 cups sugar

4 eggs

1 cup oil

2 cups pumpkin (small can)

Preheat oven to 350. Combine all dry ingredients in a bowl. Make a well in the middle and add the wet ingredients. Mix well & pour into greased jelly roll pan. Bake 25 minutes then set aside to cool.


Mix together: 3/4 stick butter, 3 oz. cream cheese, 1 tbs. cream, 1 tsp vanilla & 2 1/2 cups powdered sugar. spread over cooled bars.
